Encouraging the growth of traditional Indian culinary heritage, Chef Vanika Choudhary, mastermind of the ingredient-driven restaurant Noon and Sequel, Mumbai, and Kunzes Angmo of Artisanal Alchemy, a Ladakh-based culinary experience and food processing brand, team up to bring the rarest indigenous Ladakhi produce and their culinary legacy at an immersive dining experience at Perbacco – The Lodhi.
The collaboration features a gastronomic travelogue from the foothills of the Karakoram to the heart of Delhi which replicate the often-overlooked Indian food heritage, traditions and techniques.
The feast blends foraged and indigenous trans-Himalayan produce and heirloom varieties of Indian grains, punctuated with Noon’s house-made ferments to add umami to the exclusively curated spread creating flavours that are progressive in appeal and pay homage to the culinary heritage of Ladakh.
Noon x Artisanal Alchemy at The Lodhi will bring forth an exclusive menu, complimented with craft cocktails from Noon’s house-made infusions, tinctures, bitters and shrubs. The experience promises an engaging culinary rendezvous with a narrative behind every ingredient in the meal.
Traditional preparation like Zathuk, which literally translates to “wild nettle thukpa”, inspired interpretations like the Black Buckwheat and Churpey Tartlet with goat cream and black garlic, along with simple and modern craft cocktails some of which incorporate Himalayan pink salt and Kashmiri raw honey are a part of the menu. The feast celebrates the authentic taste and traditions of India.
The exquisite dining experience will be presented from February 16 to 19, 2023.
