Amaranta presents a culinary collaboration between Chef Vivek Singh and Tejas Sovani

January 13, 2017: A first of a series of Celebrity Culinary Collaborations, Chef Tejas Sovani, the master chef at Amaranta (The Oberoi Gurgaon) will bring ‘fun and flair’ to classic flavours along with Chef Vivek Singh of The Cinnamon Collection fame in London between January 18-22, 2017 at the restaurant.

“The special tasting menu weaves flavours of distinct regional cuisines into one seven course meal. The inspiration for the menu is diverse –from Havelis in Lucknow and traditional ‘gams’ in Saurashtra to the rarified classics of the Jain Paryushan and the ‘deras’ of Punjab, without forgetting the diverse coastline of India which has always inspired the cuisine philosophy at Amaranta,” says Chef Tejas Sovani.

Tand Pigeon Amaranta Oberoi GurgaonHighlights that especially bring our attention to this collaboration include a Carpaccio of cured salmon  with green pea chutney & Bengal puffed rice; Tandoori breast of duck, beetroot, pumpkin and peanut; Charcoal coal crusted chicken; Buttermilk sorbet, 63 degree poached egg – Goan pork churris, caramelized onion and cashew sauce; Clove smoked saddle of lamb with Rajasthani corn sauce, masala cashew nut; and Garam masala sticky toffee pudding – carrot fudge and clove ice cream to name a few.

Chef Vivek Singh is a successful and respected Modern Indian chef. He has previously led the culinary brigade at The Oberoi Rajvilas, Jaipur. Since then he is at the helm of four renowned restaurants in London, that includes, the flagship Modern Indian restaurant in London – The Cinnamon Club, an institution in the world of Indian fine dining, also awarded the ‘Best Indian Restaurants’ by Squaremeal food guide in the UK. Most recently Chef Vivek Singh was bestowed with an honorary doctorate of letters from the University of Warwick, for his significant contribution in the development of Indian cuisine across the United Kingdom. Chef Vivek has authored five bestseller-cookbooks and has a regular guest slot on BBC’s Saturday Kitchen.

Chef Tejas Sovani recently completed a 3-month stage at Noma – recognized as the number one restaurant in the world by Restaurant magazine – and winner of 2 Michelin stars. While there, he learned the nuances of foraging, sustainability, detailing and ageing and brings them to the fore at Amaranta. His signature lies in a ‘play-ted menu’, blending authentic regional recipes and unusual flavour pairings to curate a truly contemporary Modern Indian dining experience. On the other hand, Chef Vivek combines Indian culinary heritage with quality British produce, creating Modern versions of regional originals that have earned him many accolades. The use of key seasonal ingredients and reinvented recipes conceived as a result of constant experimentation form the base of this first-of- its-kind culinary celebration.
